Dec 26, 2013 I chill my wort in an ice bath for approx. 12 mins. and it gets down to approx. 120 -130 degrees. I pour that in the fermenter, top it off with 3+ gallons of ice cold water and I pitch my yeast at approx. 65 degrees. I know its not a wort chiller, but I'm pitching my yeast just as fast and at the proper temps. I haven't had a problem yet.

Dec 26, 2013 If we assume your target pitching temp is 19C, and your top-off water is 15C, then your target wort temp = [(19C * 20L)-(15C * 12L)]/8L = [380 - 180] / 8 = 200 / 8 = 25C. So use chiller until wort is around 25-26C, rack the wort to the fementer, top off with 12L of 15C water, pitch your yeast, and aerate. –
